Banana-Walnut Pancakes with Caramel Topping Recipe
INGREDIENTS:
Pancakes:
2 cups Fiber One™ Complete pancake mix (from 28.3-oz box)
1 1/3 cups cold water
1/2 cup mashed ripe banana
2 tablespoons chopped walnutsToppings:
1 firm ripe banana, sliced
2 teaspoons chopped walnuts
1/4 cup fat-free caramel toppingDIRECTIONS:
1. Heat skillet or griddle over medium-high heat or to 375°F. Grease with vegetable oil or shortening.
2. In medium bowl, stir pancake mix and water with fork or wire whisk until smooth (batter will be thin). Stir in mashed banana and 2 tablespoons walnuts.
3. For each pancake, pour slightly less than 1/4 cup batter into hot greased skillet. Cook until bubbles break on surface and edges just begin to dry. Turn; cook about 1 minute or until bottoms are golden brown.
4. Serve pancakes topped with sliced banana, 2 teaspoons walnuts and the caramel topping.

Mysterious Illness of the Day: A poorly treated skin condition has caused the face of a 26-year-old Vietnamese girl to wrinkle and wither, making her appear 50 years older.
Nguyen Thi Phuong says her hardships began three years ago when she suffered an allergic reaction to some seafood.
She developed an itchy rash that neither over-the-counter nor prescription medication were able to cure. Phuong even tried a traditional remedy provided by local Chinese medicine practitioners, but to no avail.
In addition to be ineffective, the medicine also proved costly, forcing the Ben Tre province native to abandon all forms of treatment.
She told local news outlets that she had decided to leave her recovery in the hands of God.
Though her face has been ravaged by the mysterious illness, Phuong’s husband has made it clear that it makes no matter to him. “Just understand that I still love my wife,” he was quoted as saying.
